1983 Bakery was born from a deep passion, tireless dedication, and the heartfelt craftsmanship of baker Huỳnh Gia Tuấn (Kyke Huynh). Inspired by the nostalgic taste of traditional mooncakes enjoyed during the Mid-Autumn Festival, he set out on a journey to recreate and share this beloved Vietnamese treat with the community.
How It All Began
What started as a simple curiosity about why mooncakes were priced so high turned into a labor of love. With no formal background in baking, Kyle dove into learning everything he could - transforming humble ingredients like mung beans, lotus seeds, dried fruits, and wheat flour into beautifully crafted mooncakes.
The road was not easy. Countless failed batches and long nights in the kitchen tested his resolve, but passion kept him going. What once was a side hobby turned into a calling.
From Auditor to Artisan Baker
Kyle’s path from a healthcare auditor in Southern California to the founder of 1983 Bakery is a true story of transformation. He fell in love with baking and the rhythm of the kitchen, the warmth of the oven, and the joy of sharing his creations. Even short trips away from home made him long to return and start baking again. Each batch became a way to unwind, reconnect, and share a piece of his heart.
